It is all too easy to get caught up in the hustle and bustle of our daily lives, so sometimes its nice to wind down and indulge in a sweet treat. And it just so happens, iced coffee is high on my list of guilty pleasures!! So instead of stopping by Chick-fil-A, (which has my current fav. iced coffee, I definitely recommend trying it if you haven't already!) I have a pitcher of this deliciousness ready to go, for whenever I need a cool pick-me-up!
So this recipe is based on the IHOP Iced Coffee recipe that we used when I worked there. I'm still not sure of the exact measurements but I got close enough and then halved the recipe because of course we made it in bulk quantities for the restaurant. I gave it a whirl today, and I was IN HEAVEN! Its too good not to share, and oh so easy to make! So here we go:
You'll need:
6 Cups Brewed Coffee -
2 Cups Milk
1 Cup Simple Syrup
1/4 to 1/2 Cup Torani Vanilla Syrup
Start by beginning your brew, I used Folgers Classic Roast, but feel free to experiment and use your favorite coffee! I used 4.5 TBSP ground coffee to the 6 cups of water.
While the coffee is brewing begin on your simple syrup (Or buy the already prepared syrup in stores) If making it at home, remember its equal parts water and white sugar. So 1 cup water, 1 cup sugar and begin the boil. When it turns clear its done and you can turn down the heat.
Once the coffee and Simple Syrup are complete, combine them in a large pitcher or jug. Then add the milk, IHOP always used 2% and that is just what I happened to have in the kitchen, but you are free to use whatever you prefer!
Add in the Vanilla Syrup to taste. Obviously the more you use the sweeter it will be, I was naughty today and used the 1/2 cup! ;)
Now stir and let chill in your refrigerator until cool. Serve over ice and enjoy!!
